What's a good book for chefs?

I want to get my fiance a book, but can't find one that seems perfect for him. He's a chef and loves Anthony Bourdain's books so I'm looking for something along those lines. Not a cookbook. I'm hoping to find something interesting, maybe about molecular gastronomy or offal meats, but a good biography would be nice too. Thanks!
