Terry, all you need to do is in a pot of water add your chicken, celery, carrots, onion (if you have), bay leaf, salt and pepper. That is the basics, I do not add squash, potato or spinach. I just bring it all to the boil, then lower the heat to medium high for about 20 minutes, then I lower to simmer. The meat will fall of the chicken, but before you turn everything off and plate, taste it for seasoning. If by chance you have a chicken or vegetable stock cube laying around add that also.
